Yummy summer salads great with bbq!!

I thought I would post a few of our favorite(ok well MY favorite) summer salads.
Chris seems to think I'm on crack with the ingredients that I put in my macaroni salad but this coming from a man who likes a fried egg on his mac and cheese and mayo on his meatloaf, I'm not using him as an example of good taste. So here we go.
Potato Salad
15-20 baby potatos, cooked and cooled
6 hard boiled eggs, cooled and peeled
3 dill pickles, diced
2 or 3 radishes, sliced
2 stalks of celery, chopped
2 green onions, chopped
Dressing
1 cup of miracle whip (NOT real mayo, you need the sweet tang)
1 squirt of mustard
2 tsp of the dill pickle brine
1 tbsp dill weed
1 tsp paprika
1/2 tsp cayenne
Toss all the veg with the dressing and let chill for at least 3 hours to let the flavors incorperate
Macaroni Salad
1 pkg of your favorite small pasta
1/2 ham steak diced
1/2 cup of small cheddar cheese cubes
3 dill pickles, diced
2 or 3 radishes, sliced
2 stalks of celery, chopped
2 green onions, chopped
Dressing (same as above)
1 cup of miracle whip (NOT real mayo, you need the sweet tang)
1 squirt of mustard
2 tsp of the dill pickle brine
1 tbsp dill weed
1 tsp paprika
1/2 tsp cayenne
Now honestly, my Caesar Salad I can make the dressing but I really love Lighthouse Caesar dressing. It is usually found in the cooler of your produce section. It is really good so pick some of that up!
Caesar Salad
Romaine lettuce, washed, dried and chopped into bitesizes pieces
1/2 cup REAL parm cheese.
1/2 cup REAL bacon bits(just cut up and cook 3 or 4 pieces)
1 clove garlic finely diced
1 cup of croutons. I love the garlic cheese ones the best
1/2 jar of that Lighthouse Caesar dressing.
For the best results add everything except your croutons 1/2 hour before serving and set in the fridge. This will give it time to really soak in the dressing but not too long that it will get soggy. Add your croutons and yummy yummy!
