Hmmm carrots

I'm in the middle of making a beef stew with dumplings for dinner and even a carrot cake with cream cheese frosting. So since I'm doing that I'll make this my recipe for the week
Carrot Cake
Mix together:
4 eggs
1 stick butter 1 stick margerine- melted
2 cups sugar
1 snack size container of applesauce
2 tsp vanilla
Add:
2 cups flour
2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
Stir in:
3 cups shredded carrot
1/2 cup raisins and/or chopped pecans if desired
Bake at 350
2-9 inch pans 35-40 mins
1- 9x13 40-50
Frosting:
Beat together
2 pgk cream cheese
1 tsp vanilla
2 tbsp honey
Slather on the cooled cakes and enjoy!
